Mini Pecan Pies Recipe

Everyone loves desserts during the holidays, it's one of the main reasons most of us make resolutions to hit the gym in the new year. But when things are bite sized I just can't help but feel less guilty about indulging in my favorite goodies, and pecan pie is at the top of the yes please list. Last year, I came up with this interpretation sans the (gross) corn syrup, so I decided to take it and shrink it down to fun size. Let's just say they didn't last too long in our household and it packed just enough caramel, crust and crunch to satisfy my craving.

Mini Pecan Pie Recipe 
 Yields About 3 Dozen

  • 1 C Light Brown Sugar
  • 1/4 C White Sugar
  • 1/2 C Butter
  • 2 Eggs
  • 1 Tbsp All-Purpose Flour
  • 1 Tbsp Milk
  • 1 Tsp Vanilla Extract
  • 1C Chopped Pecans
  • 2 Rolls Of Immaculate Baking Co. Pie Crust Or Two Pie Crusts

  • Preheat oven to 350˚ degrees F (175 degrees C)

  • Roll out the soften dough and cut out 3in circles...
  • and place in greased mini muffin tins..
  • In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. 

 Last add the milk, vanilla and nuts.
 Pour in mini pie crusts...
And bake for 15 minutes (or until lightly browned) at 350˚. Remove from oven, let cool completely before removing from tins.
 Try them alone, with whipped cream or vanilla ice cream.
They're not small, they're fun sized, so eat more ;).
