Spanakopita 'Egg Rolls'

Aside from Chinese food, Greek food has a special place in my heart, it mostly helps me reminisce about my days living in Queens with my then, very greek boyfriend. I will say two good things came from that disaster of a relationship, New York City and my love for Greek Food (and the language, but I've mostly lost it, use it or lose it people). 

So, while I don't often indulge, every now and then it's fun to play around with some old recipes. Now, this one isn't quite so Spanakopita like since it's missing a few ingredients, like lemon juice and ect. but I was amazed how similar and of course, how freaking good it was. Plus it's ridiculously easy and took me a whole 25 minutes. I'm thinking this is perfect for those last minute parties you might be throwing this summer...Prepare to impress! (Ps. They're very kid friendly.)

Spanakopita 'Egg Rolls' 
(Yields 10)
20 Sheets of Phyllo Dough (Thawed)
1 Pkg. Frozen Spinach (Thawed)
1/2 Cup Crumbled Feta 
1/2 Onion, Chopped
1 Egg
1/2 - 1 Cup Olive to Coat Phyllo
3 Tbsp. Olive Oil For Cooking

Preheat Oven to 350˚

In a medium sauce pan, saute onions with olive oil until transparent. Add spinach, cook down and then add feta. Remove from heat and add egg, be very careful not to scramble!
Next, lay out your phyllo sheets and coat each with olive oil. Take a small amount of the Spinach mixture (about 2 tbsp.) and place an inch away from the edge of the sheet. 
(Sorry It's Out Of Focus, Fail!)
Fold over once, and tuck in the sides. Continue rolling until complete, coat the seam with olive oil and face seam down on non stick cookie sheet. 
Bake for 10-15 Minutes and remove when Golden Brown ( I took these out a little early, but the first batch I was perfect)
Let cool and enjoy!

This Week...

I don't know about you but it's been a long week, and while I feel like it was some what productive I am absolutely looking forward to the weekend, in just jeans, a tee, red lip and a messy bun. 
 These babies just arrived and I'm already stumped on what to pair them with.
 If you're a fan of those packet snacks these Smooch Snacks are definitely for you, the chia seeds are what sold me. Purse essential.
 And I'm looking forward to digging into this  tomorrow morning, I even added chocolate chips for extra indulgence.
I've been living in this bracelet all week, so in love. (under $15!)

One Top, Two Ladies

 When QVC asked if I'd be interested in styling up Lori Goldstein's Slub Knit Assymetrical Top with one of my pals I immediately thought of my favorite neighbor and close friend, Grace. I mean her eclectic style always makes me smile and I wanted to see how she'd serve it up next to me. She went tropical and I went for a night on the town, tucking mine in to slub knit shorts for a fuss free look.

 When it comes to bold I feel like I pretty much have that covered, whether it's playing with neons or graphic prints it's part of my line up. I wasn't sure about the chevron with the florals but for some reason I just went with it, and while I had a jacket layered over to begin with I kind of couldn't resist these two pairings.

Bohemian Bliss

For me during the summer it's all about free flowing pieces, the trusty leopard palazzos and a cute slouchy peplum tank combination has won me over to the point where I'm on repeat, and have no regrets about wearing the pairing a few days in a row. It gives me an almost bohemian bliss, with a nod of chic.

Now, I will say that I can only wear wedges with these pants because when attempting to switch them up with a low pump or flat I about killed myself in the process by getting both caught on the front or back of the pantleg. Turns out, these are dangerous pants and one must wear with caution or you might face plant in the middle of a department store and become fashion roadkill. Ok, I didn't quite fall, I was able to catch myself to a  shame bearing stumble, twice in 5 minutes.

 Lesson learned, and this is why I don't wear flats. They're a death trap ;)

Hometown Hotspots With Fuze: Sarasota

While I love the big city life filled with events and happenings we currently live in a smallish town on the water in Florida. And while both our careers cause us to be away, my husband and I often consider ourselves homebodies, we'd much rather spend time at home with our kids than go out and about every day (or weekend). Although we're quite involved with renting a moving and ordering take out, we do have some what of a routine with our own personal hotspots in Sarasota. 
Whether it's on the beach or on a lush park, we're always about a good picnic. We grab our favorite picnic blanket, pack a bag or stop by Whole Foods to stock up and are off. There's just something about sitting on a blanket and watching the boys run around that is so nostalgic, It quite literally my favorite thing to do. Our Favorite spots are Island Park, Lido and our most recent discovery the median at St. Armand’s. 
Other outing favorites include the Farmer’s Market every Saturday with fresh pastries or they’re specialty popsicles (my favorite are the mexican chocolate). And of course while we love everyone’s favorite coffee stop, we adore quaint little hole in the wall’s like the Coffee Loft which is surprisingly, a non profit for charity. Since beach time is always on the menu because we’re so close, we often find our selves at Lido as opposed to ‘everyone’s choice’ Siesta Key, we just find it less touristy and more homelike.

Sour Cream Waffles

Sour Cream Waffles
2 Eggs
2/3 Cup Sour Cream
2/3 Cup Milk
1/4 C Melted Butter
1 1/2 Flour
2 1/4 Tsp. Baking Powder
1/2 Tsp. Baking Soda
1 Tbsp. Sugar
Pinch Of Salt
 Beat the eggs, add in butter, sour cream and milk. Mix until blended. 

Sift together flour, sugar, baking powder and baking soda in a bowl and combine with wet mixture. 
 Pour on heated waffle iron and bake until steaming stops. 
 Top with homemade whipped cream and chocolate chips if you please...
