Homemade Flour Tortillas

Even though I'm a little late on the Cinco De Mayo game, I figured it's still May, so why not celebrate all month? After all, IMUSA and McCormick were kind enough to send over some goodies to help get me festive. So I decided to make it all about tortillas, they're practically the base of all Mexican cuisine, and are surprisingly simple to make.  So I grabbed the recipe off the box of IMUSA Tortilla Press, and dove right in. Now, the first try wasn't the prettiest but they tasted better than any store bought I've ever had, so it was well worth it. Try them here...

Flour Tortillas - Makes 12
Adapted from IMUSA

3 Cups All-Purpose Flour
2 Tsp. Baking Powder
1 Tsp. Salt
4-6 Tbsp. Lard or Shortening ( I used butter) 
1 1/4 Warm Water

In a large bowl, combine the flour, baking powder and salt. 
Add in lard or shortening, and mix with you hands (or a pastry cutter). You want the ingredients to cling together and hold form when squeezed in your hands. If it crumbles mix more, or add more shortening. 

Add the water, all at once and mix dough quickly until dough forms a mass. 

Knead dough by folding it in half, pushing down, and folding again. It should take about a dozen times to form soft dough and not feel sticky any longer. 

Cover dough with towel to rest for about 5-10 mins. 

Next, with a griddle or fry pan heat a small about of oil on medium/high heat. 
Taken small 1-2'' pieces and roll into ball, place on tortilla press and give it a press. 
Place on griddle and flip when you see dough start little bubbles, like a pancake. 

Remove from heat and place in Tortilla Warmer for later use. 
Repeat.
