Yogurt Brownie Bites

 
I love chocolate, it's really no new thing around here, but I love chocolate. Now, when I'm having a chocolate craving I can't just be satisified by eating a candy bar (or a whole bag of chocolate chips), I need sustenance. We're talking cookies, cake, granola bars and one of my favorites, brownies. If you're a long time reader, you also know I try to make these indulgences as healthy as possible (check out these and these). So when I was in the mood to get creative with my cocoa powder the other night, I decided to try adding yogurt instead of my typical eggs and butter/oil combination. End result?

Absolutely delicious.

Yogurt Brownies
1/2 Cup Unsweetened Cocoa
3/4 Cup Flour
3/4 Cup Sugar
1 Egg
1 Cup Yogurt - I went with "Whole Plain", but flavors might be fun to try!
1/4 Tsp. Baking Powder
1 Tbsp. Vanilla Extract
2 Tsp. Cornstarch
Pinch of Salt

Preheat oven to 350˚

Combine flour, sugar, cocoa, baking powder, salt and cornstarch in a large bowl. Add in egg, yogurt and vanilla. Mix until thoroughly combined. The mixture will be thick.

Spoon into greased mini muffin tins or an 8x8 pan and bake for 10 minutes (muffin tins, 20 mins for 8x8).

Let cool (slightly, of course) and enjoy!
