Cranberry and Chocolate Chip Pancakes

When I was a kid I was all about homemade breakfast foods like waffles, french toast, and of course, pancakes. I remember my mom always experimenting with different kids of pancakes, from blueberries to banana nut and even chocolate chip, and to a kid those are exciting pairings.

And now that I know the options are endless, I thought what better way to embrace to cold weather than cranberry and chocolate chip pancakes. Which at first sounded odd, because even I questioned my self asking if they went together, but as soon as I tasted them I immediately knew I was right all along...especially after "drizzling" some warm apple cranberry compote (that I'm using for something else) over the warm cakes instead of syrup.

Cranberry and Chocolate Chip Pancakes - 8 Servings
1 1/2 C Flour
3 1/2 Tsp Baking Powder
2 1/2 Tbsp Sugar
1 Tsp Salt
1 1/4 C Milk (Or Almond Milk - I was out of milk)
1 Egg
3 Tbsp Butter, Melted
1/2 C Fresh Cranberries (Chopped or Whole)
1/4 C Mini Chocolate Chips

1. Sift all the dry ingredients together in a bowl, combine and then make a well in the center.
2. Add milk, egg, and melted butter in the center, combine until smooth. Add cranberries, stir, then add chocolate chips. 
3. Heat a lightly oiled pan or griddle over medium high heat. Pour or scoop the batter onto the pan (about a 1/4 C for each pancake). I decided again perfectly round pancakes because it give Aiden the chance to get creative and tell me "what they are". Let each side brown, and serve hot.
