Baked Kale Chips

Kale is one of those veggies that I absolutely loathe, it's bitter and has the most unreasonable texture for it's taste. But my husband loves it, and some how it keeps making it's way into our house which left me looking for better ways to prepare it (i.e. - hide the taste).
Luckily I stumbled upon a recipe for Kale Chips a few months ago and haven't looked back since, being it's the best invention since sliced bread because they taste just like potato chips (seriously, my toddler is obsessed). It's simple, quick and only requires 3 ingredients (most of) which I'm sure you have already.

Baked Kale Chips (Serves 6)

1 bunch/bag of fresh kale
1 tbsp olive oil
1 tsp salt
1. Preheat oven to 350 and line a non insulated cookie sheet with parchment paper.
2. With a knife carefully remove the leaves from the thick stems and cut into bite size pieces, wash thoroughly and dry kale with salad spinner.
3. Toss with olive oil and spread on baking sheet, sprinkling salt lightly on the kale. A little goes a long way, you do not want to over do it or it will not come out right.
4. Bake 15 mins or until edges are lightly brown, not burnt.
5. Enjoy!
