Smirnoff Mango Passion Fruit Ice Cream Sundae

Alas it’s summer, the 4th has come and gone and we’re all looking to cool off from the ongoing heat waves. And while every now and then we get to cool off with a nice afternoon shower, it’s even better to find something refreshing straight from your freezer. And yes, I’m talking about the All-American favorite, Ice Cream. Who doesn’t love the stuff? I swear we have 2 1/2 Gallons in our freezer at all times, so if you want ice cream, come to me.

Now, scooping the creamy goodness right out of the carton is all fine and dandy but sometimes things need to be mixed up and made a little fancier – a sundae fit for adults. So when a Mango Passion Fruit Ice Cream Sundae using the Smirnoff Sorbet Light Mango Passion Fruit came to mind, I was quick to jump on the thought. An icy treat infused with a vodka specialty? How perfect would this be for backyard parties?

I grabbed a couple mangos, some sugar, water, and of course the (almost) main ingredient Smirnoff Sorbet Light Mango Passion Fruit and came up with something I found quite brag worthy...

Here’s What You Need:
1-2 Mangos
1/4 C Sugar
1/2 Water
Cinnamon
1 Tbsp. Smirnoff Sorbet Light Mango Passion Fruit Vodka Specialty
1 Tsp. Cornstarch - Optional
Vanilla Ice Cream

First, dice up a mango and throw it in a sauce pan with Sugar and Water and a dash of cinnamon. (If needed stir in cornstarch.)

Bring it to a boil, and then reduce to medium stirring the mixture constantly for about 4 minutes, or until sauce has thickened up a bit. Add a Tbsp. Of the Sorbet Light Mango Passion Fruit, and reduce to simmer.

Scoop your ice cream into serving bowls and top with your Mango Passion Fruit topping, adding sliced mangos if you please.

Voila, A Refreshing New Spin on Your Typical Sundae!
