I think you got the hint that I'm on a major muffin kick lately and I can't help but continue to the play with recipes throughout the week, and this time I added some wild berries to my otherwise simple muffin recipe and the results were obviously drool worthy with a touch of healthy for good measure...
Mixed Berry Muffins
2 Cups Sifted Flour
3 Tsp. Baking Powder
3 Tbsp. Sugar
1 Tsp. Salt
1 Egg, Slightly Beaten
1 Cup Milk
1/4 Cup Vegetable Oil
`1 Cup Frozen or Fresh Mixed Berries
Preheat Oven to 400˚
Sift together all the of the dry ingredients, make a well in the middle and add milk, oil and egg.
Add berries and stir until thoroughly combined.
Fill muffin tins 2/3 full, and bake for 15 minutes or until toothpick comes out clean..
Let slightly cool and serve warm for Brunch of Just Because (I also made flowers!)
