Best Oatmeal Cookie Recipe

For the past week I've been shoving my face with my grandmother's famous oatmeal cookies, I don't know what it is about the crunchy, yet melt in your mouth texture paired with heavy oats and nuts topped off with delicious chocolate chips but it just does it for me. So much so that the 3+ dozen she made before we came is down to single digits...Oops. Of course this kind of addiction needs to be shared, am I right? Plus it's super quick, and easy.

Best Oatmeal Cookies Ever Recipe - Yields 3 Doz.
1 C Chocolate Chips
1 C (Finely) Chopped Walnuts
1 C Light Brown Sugar
1 Egg
1 C Whole Wheat Flour
1/2 Tsp. Baking Soda
1/3 Tsp. Salt
1 Tsp. Maple Extract
1/2 Tsp. Cinnamon
3 C Rolled Oats (Not Quick Oats)
3/4 C Butter, Softened

In Medium to Large mixing bowl beat butter and sugar until creamy, Add egg and vanilla and mix until combined and smooth. In Separate bowl mix together baking soda, salt, cinnamon, and flour.

Combine the flour and creamed mixture together, add chocolate chips and chopped walnuts.

With A Tablespoon drop the batter onto a greased cookie sheet and bake for 11 minutes or until golden brown. Make 3 Dozen Medium/Large Cookies. Store in airtight container. Enjoy.
