Recipe: Watermelon Mint Cooler

Being that I'm attending a Memorial Day party tomorrow, I thought since they're covered on food, it'd be fun to bring over a cooling refreshment to share that's appropriate for kids and adults. Since watermelon seems like the perfect fit for the holiday weekend, I took a stab at creating a Watermelon, Cucumber, Mint and Lemon cooler, which after concocting tasted somewhat like a refreshing watermelon lemonade. And of course, knowing me, I had no problem with this end result. What are treating yourself to tomorrow?
Watermelon Mint Cooler (Serves 2) 
1 1/2 Cups Watermelon Chunks
1/2 Cup Peeled and Quartered Cucumbers
1 Lemon - Juiced
2-3 Sprigs Of Mint Leaves (Extra for garnish)
Sugar to Taste (Optional - I didn't add sugar, but some might want to)

1. In a blender puree the watermelon and cucumber chunks, add a tablespoon of water if necessary . 
 2. Next add the mint leaves to the puree, blend and add lemon juice, and blend again (this is where you add sugar if you want).
3. Pour into a pitcher, and refrigerate until chilled, then stir (separation occurs) and serve, garnish with mint leaves and enjoy!
**For adult beverage add a dash of vodka!
