I honestly can't believe it's time to talk about back-to-school already! I have to admit I'm not ready. We're sending our oldest off to a new school and I'm attempting to savor what little time we have left before his first year of middle school commences. 


Also, I'm not looking forward to the experience that is the back-to-school chaos. If you have school age kids, you know exactly what I'm talking about. Between making sure you have all the right supplies, to getting pick-ups and drop offs scheduled, and then all of their extra-curriculars and chores, there's nearly zero time to think about creating a well-rounded meal that you can all sit down for before sending them to bed and hitting the reset button. Truth: the beginning of school reminds me of the movie Groundhog's Day, we start the 'same' day all over again until we perfect it- in June. We have 12 years(ish) to keep at it so here we go...

So meals during back-to-school week are often a little sad. I try guys, I really do, but I just can't always get it together to make something that just wows them (or as the boys say: " you knocked it out of the park, Mom") 

But this year might just be the year because I have a secret weapon in my back pocket: Tyson® Chicken Strips. They're an instant meal completer. Toss in a cup of chopped strips into a salad and we're talking a protein-packed meal in under 25 minutes without the hassle. They're also great for when you're not feeling creative with lunches. They're a real crowd-pleaser, no matter the age!

Full disclosure: I've been a fan since my parents had a bag stocked in the freezer next to a bag of Tyson® Chicken Nuggets for quick and easy meals after baseball practice or for sleepovers. A few years down the road when Tysons® Any'tizers® Chicken Fries came out, it was clutch if your parents had them stocked. So of course, mine did.  

Now you can pop into your nearest Shoprite, grab a bag from the frozen section (next to the chicken) and with just a few essentials you're on your way to make the easiest meal of your life. If I do say so myself, the recipe that I whipped up for BTS is crazy delicious. One crunchy bite in and you're going to realize you're never going to want to stop making them. I was looking for something a little outside the box for chicken strips and I think these Crispy Chicken Baja Tacos were 100% the way to go.


 I love a good Baja taco, gimme a little (or a lot of) crunch with a warm tortilla and you'll have the key to my heart. You probably know I love mixing sweet, tart and savory so I added some pineapple and lime to my kale + red cabbage slaw. It's a perfect pairing for the extra crispy chicken strips. Finish with avocado slices and a sprinkle of cheese and it's definitely a "Mom, you knocked it out of the park" kind of night...
Crispy Chicken Baja Tacos With Pineapple, Kale and Red Cabbage Slaw

What You Need: 
1 Bag Of Tyson Chicken Strips
Soft Flour Tortillas 

For The Slaw
1 Cup Red Cabbage, Julienned
1/2 Cup Carrots, Julienned
1 Cup Of Kale, Chopped
3/4 Cup Pineapple, Chopped
1 Tsp. Fresh Lime Zest
3 Tbsp. Fresh Lime Juice
1/3 C Olive Oil
2 Tbsp. White Vinegar or
2 Tbsp. Pineapple Juice
2 Tbsp. Chopped Cilantro
Salt and Pepper to taste

Optional, but delicious
Sliced Avocado
Fresh Cilantro
A Squeeze of Lime
Cojita or Feta Cheese Crumbles

Let's Get Cookin' Good Lookin'.

 1. Bake Tyson Chicken Strips accordingly to bag's directions. 

2. In a bowl combine julienned cabbage and carrots with chopped kale and pineapple. Add pineapple juice, vinegar, olive oil and lime juice with a dash of salt. Toss until coated. 

3. Add Tortillas to the oven for last 2-5 minutes of the chicken's cook time. Or until warm.

4. Remove chicken and tortillas from heat.

5. On a plate, place tortilla with a chicken strip and top with Pineapple, Kale and Red Cabbage Slaw. Add avocado, cilantro, a squeeze of lime and cheese and you're good to go. Enjoy. Repeat. Enjoy.
