Teriyaki Chicken Pizza

Pizza, we eat A LOT of it in our house. So much so that I have close to 10 bags of Trader Joe's dough in the freezer just in case it suddenly becomes a pizza night. Truth, we have a lot more of these nights during this pregnancy than before because the idea of creating extravagant meals is the last thing I want to do when the end of the day strikes. So, when I teamed up with Soy Vay to create an easy weeknight recipe using their Veri Veri Teriyaki Marinade I immediately wanted to get creative with pizza. First off, if you haven't tried their marinade you need to, it is 100% a pantry staple. We've actually been using Soy Vay for years before I signed on to this campaign and even had a bottle in the cabinet ready to go. It's amazing and great with everything from chicken to tofu and vegetables. It's perfect for last minute meals and a little bit goes a long way. Try it, you won't be disappointed. 

Back to the pizza. Nothing quite goes better with teriyaki than chicken so it was a no-brainer to go the chicken teriyaki route, but it definitely needed additional toppings to really make the flavors pop. Enter pineapple, red onion, and pancetta (or sliced ham), the champions of pizza toppings. 

I personally LOVE, like really LOVE, pineapple on pizza. So it was an obvious choice because almost all of my homemade pizzas have this tropical topping on it. The sweet and tart flavor with the teriyaki is what really makes the pizza as delicious as it is. You have to trust me on this one guys, even if you hate pineapple on pizza. Next, a little color and flavor from the red onion, followed up with the pancetta tie it together with its heavier, savory qualities. These toppings play so well together that you might never want to have your pizza any other way. 

Teriyaki Chicken Pizza (Serves 4)

1 lb (or one package) Pizza Dough 

1-2 medium boneless chicken breast, sliced into small strips

1/3 Cup Soy Vay Veri Veri Teriyaki Marinade

1 Cup Fresh Pineapple, Chopped. 

1 Cup Mozzerella Cheese, Shredded

1/2 Red Onion, Thinly Sliced

1/2 Cup Pancetta, cooked


Preheat oven to 450˚

In a medium sized pan combine the chicken and Soy Vay Veri Veri Teriyaki Marinade, let sit for 5 minutes before cooking on medium heat. Remove chicken and reserve the leftover sauce. 


Next, the dough. I usually love to create rectangle pizzas on a cookie sheet but my dough wasn't completely thawed in the middle so I had to cut my dough into two pieces and create two round pizzas. The kids loved it and it wasn't terribly difficult. So, if you want to go big and do a rectangle pizza spread it out on a cookie sheet. If not, cut your dough in half and make two smaller round pizzas and place on a cookie sheet. 


With the reserved teriyaki sauce coat your dough, about a 1-2 tablespoons full. Add chicken and top with mozzarella cheese. 


Add the sliced onions, pineapple and sprinkle with pancetta. Top with more cheese if desired.


Bake for 10-15, or until cheese and crust is lightly browned. 


Serve hot and enjoy!
