Pancake Poppers

If you got excited by the name, you're in for a treat, especially when these delightful babies come in at a whopping 20 calories a bite! Hello satisfaction while watching the waistline and how perfect is this for spring, er, Easter! Happy Easter! XOXO
Pancake Poppers 
3/4 C Flour
3/4 C Milk
2 Eggs
1/8 Tsp. Salt 
2-3 Tbsp. Melted Butter (Microwave 15 Secs.)

Strawberry Jam Compote
2 Tbsp. Strawberry Jam
1/2 Cup Diced Straberries

Place Mini Muffin tins in oven and preheat to 400˚.

Combine flour, milk, salt and eggs in a bowl, and mix until smooth.  
Carefully remove the hot tins from oven, and brush each one with a pastry brush with the melted butter, pour batter into greased tins, filling 2/3.
Bake for 12-15 Mins (Or Until Puffed and Golden).
While the 'Poppers' are baking mix together strawberry jam (or Your Fav. Flavor) and sliced strawberries, stir and mash until it has a compote like texture. 
Remove poppers from oven, let cool and plate, sprinkle with powdered sugar (optional) 
and drizzle with strawberry compote. Enjoy.
