Buffalo Goat Cheese Bites

When I'm planning a party I always opt to make things easier to handle and eat when it comes to the food. The less need for utensils the better and if there's a chance that clean up will be easier, I'll take it. So when I noticed my goat cheese in my fridge was just about due for expiration I quickly intervened and had to come up with something. I've dabbled with frying them in the past and was a fan, but I wanted something more. So when I was looking in my fridge for a little inspiration, I spotted a little spicy something and immediately thought to serve them up Buffalo Style at the party. They're the perfect amount of kick, and would be amazing if made using blue cheese too! Plus, they're baked. 

Buffalo Goat Cheese Bites 
(Yields 15-18 Minis)
4 oz Goat Cheese
1/2 C Bread Crumbs
2 Tbsp. Butter 
2 Tbsp. Hot Sauce
1 Egg
Preheat oven to 350˚
Roll goat cheese into 15-18 little balls. 
Coat with egg and toss with bread crumbs.
Bake for 10 minutes (or until golden).
While baking, melt the butter in a small saucepan and add in hot sauce, stirring until thoroughly combined. Set aside. 
Let goat cheese cool, and lightly toss in hot sauce mixture. 

And serve.
